From Low German Struwe, from Middle Low German strûve (flat pastry), from the adjective Proto-Germanic *strūbaz (stiff, shaggy). Doublet of southern Straube (kind of fritter, doughnut). Further cognate with Dutch struif (pancake, omelette).
