I've heard the claim that it was from Hebrew "oy" + Aramaic "way". I've also heard that it was from Persian "ây vây", going back to the Babylonian captivity. Thus for the record: The Middle High German "ôwê" is amply attested and the developments MHG ô > Yiddish oy and MHG ê > Yiddish ey are both entirely regular and expected (cf. e.g. groys, geyn).
