AFAIK it's to indicate that it's the name of a species/breed, especially in bird-books that capitalize the names of all species/breeds (Red-Tailed Hawks, Ravens, Bald Eagles, etc), something which has led to no shortage of drama on Wikipedia when it comes to how to capitalize article titles (and article text).
