This is specifying that frying is cooking in hot oil. You can fry using butter or margarine. Restaurants use a shortening for their deep fryers that is semi-solid at room temperature - I'm not sure if that counts as an oil or not. When pan frying their may be little oil invollved, just enough to keep from sticking is this really in or is it closer to 'on' hot oil? If frying on a griddle is it in oil?
