The "young working woman who is fond of gallantry" appears to be a fairly euphemistic definition straight from the 1913 Webster's Revised Unabridged Dictionary. Grisettes were the equivalent of groupies who hung around with artists at popular venues: implying a relationship above the level of prostitute, but not involving as much committment as a mistress.
