Borrowed from (c. 16th-18th century) Early Modern Spanish berenjenas (eggplant), plural form of berenjena. In Early Modern Spanish, Spanish ⟨j⟩ was pronounced /ʃ/; /ʃ/ became /s/ as common with other early borrowings.
