gnudi (usually uncountable, plural gnudi or gnudis)
- A kind of pasta similar to gnocchi, but made with ricotta instead of potatoes.
- 1994, The Wine Spectator, volume 19, page 66:
- Ricotta gnudi (ravioli filling without the pasta) are perfumed with marjoram.
- 2013, Marcy Smothers, Snacks: Adventures in Food, Aisle by Aisle, New York: HarperCollins, page 154:
- Gnudi means “nude” in Italian. Akin to a boiled dumpling, gnudis are skinless. Think ravioli without the pasta.
