From Hokkien 雜菜杂菜 (cha̍p-chhài, mixed vegetables) or Teochew 雜菜杂菜 (zab8 cai3, mixed vegetables). Compare Indonesian capcai, Singapore English chap chye, Thai จับฉ่าย (jàp-chàai), English japchae, Korean 잡채(雜菜) (japchae).
